Here's what I'm planning for my girls nite out at my house next Thursday. I haven't quite figured out the logistics of getting this all done due to working, but here it is:


Nuts


Pita chips w/ hummus


Veggies w/ onion dip


caesar salad


kabobs


wild rice


fruit salad


chocolates


coffee, tea, wine

-mini crustless quiches (buy mini cupcake pan to make these)

-jumbo shrimp w/ SF cocktail sauce (make it will Heinz 1 Carb Ketchup, horseradish & hot sauce

- Quesadillas - take 2 70 carb WW tortillas layer one with LF mexican cheeses, mild chiles, put the 2nd torilla on top, lay in a frying pan and flip after a few minutes to finish. Cut into 10-12 slices.

- scallops wrapped in turkey bacon

- hummus with veggies or WW pita chips

the ever so obvious crudite platter


homemade hummus


maybe a spinach/artichoke or crab dip made w/ ff cream cheese/reduced fat mayo to be served w/ ww pita chips or veggies??

I saw several mention the WW pita chips. Is there a store brand of these that are safe...or are you guys making them yourselves from WW pitas?

Hi Rachel,


I'm not sure about everyone else, but I make my own. I just cut up a ww pita and brush it with olive oil and seasonings. I just mix a bunch of stuff together depending on our mood and throw them in the oven for about 10 minutes. I'm not good at writing down recipes so I apologize. However, today I used: oregano, garlic powder, celery salt, cayenne pepper, black peppercorns, sage, basil, thyme, and who knows what else I grabbed. My DH LOVES them. They are really good.

I think it's caponata you are making. Usually the recipe also calls for pine nuts.

I just found some new pita chips that I think are legal in the "personal choice" sense of the word -- New York Style Pita Chips in Whole Wheat. A serving size of 7 picese (28 grams) has 3 grams of dietary fiber. Ingredients are: whole wheat flour, palm oil, salt, less than 2% of the following: molasses, canola oil, yeast, vinegar, citric acid. The palm oil probably isn't great since it has saturated fat... but for a car snack on the way to the beach, it rocked!

For like a football type party or something heavier, you could do a hearty dip using lean ground beef, light velveeta cheese and salsa in a crockpot. I use to do this with regular ground beef, nacho cheese soup and salsa and then served with regular tortilla chips. But it could easily be converted to a SB friendly food. Use cut up green peppers, red peppers, homemade pita chips, triscuits, etc for dipping.

other ideas:

dark chocolate covered fruit

the fruit platter with a dip (lite cream cheese, yogurt, davinci syrups, etc)

make little hors d'oeurves out of triscuits by using the flavored ones and then adding lots of great toppings

If it's a potluck or something like that, cabbage rolls are a great dish to bring. Or stuffed green peppers.
