My new favorite salad

People often say they get sick of salads.  As long as my salads have interest I don't get sick of them at all!  I get bored of the same dressings and the same stuff (generally caesar on romaine or romaine with a vinagrette and tomatoes).  But give me an interesting salad with chickpeas, nuts, fruit and a fun dressing and I'm there!


It is kind of based on a salad recipe from a magazine and a salad I'm hooked on at Chili's.


Salad topping - make this in a big bowl and keep in fridge for a day or two (don't serve it to company on the second day LOL!)


diced green onion (whites and tops)
diced red bell pepper
diced seeded cucumber
diced tomatoes (I like to use cherry or the like)
grated carrots


can add other things like celery (or corn phase III)


For my first night I put the topping on torn romaine and top with lf feta and walnuts.  The dressing I use on this salad is a low sugar raspberry vinagrette.  It is wonderful how the flavors all blend and how well the raspberry accents the feta and walnuts.


 


The second night it is the topping for a buffalo salad.  I marinate pounded chicken breasts in buffalo hot sauce and bake (regularly, not like the buffalo recipe posted on this site).  I slice the breasts up and put them on this salad (topping on top of torn romaine) with lf blue cheese.  I make toasted WW tortilla slices to put on top and top with a lite ranch mixed with chipotle sauce.  This one would be especially nice in phase III with the corn.
