Creamy Asparagus Tart


1 Tbs. canola oil
1 small leek, thinly sliced
1/2 lb. fresh asparagus, cut into 2-inch pieces
1 cup shredded lf swiss cheese (about 4 oz.)
1/2 cup light mayonnaise
2 eggs
2 tsp. dijon mustard
1/4 tsp. ground black pepper
1/2 cup skim or 1% milk


Preheat oven to 375 degrees.


In 12-inch skillet, heat oil over medium heat and cook onion about 5 minutes. Add asparagus and cook 3 minutes or until crisp-tender.


Pour asparagus mixture into 9-in pie plate. Top evenly with shredded cheese.


In small bowl, blend mayonnaise, eggs, mustard and pepper. Slowly whisk in milk until smooth; pour into pie plate.


Bake on heated cookie sheet for 25 minutes or until set and lightly browned.

This was really good! I didn't use all of the cheese though, because it seemed like a lot. I used 3/4 cup. But Mmmm! Even DH loved it! :)

I made a creamy broccoli tart by substituting leftover roasted broccoli (made extra for this purpose), lf grated Cheddar and about 1/3 c chopped onion. I skimped some on the mayo because I hate mayo, but otherwise went with the recipe. It was delicious! (Didn't taste like mayo at all...)
