I am not sure if this recipe has been posted before, but I thought it was so good, I just had to post.
It's actually the recipe on the back of the Velveeta shells and cheese box, but I just made it SB friendly. I saved all my grain servings for this meal, because I knew I was going to love it. But after about 1 cup of it (I had salad first) I was stuffed. It's very filling. And my 2 year old ate two bowls of it and my 1 year old had a sizeable amount, so it was a hit all the way around!

CHEESEBURGER MAC SB STYLE
1 lb. lean ground beef
2-1/2 cups fat free milk
1/4 cup lo carb Heinz ketchup (or other SB friendly ketchup)
2 Tbsp. yellow mustard
1 Tbsp. onion powder (I didn't have this, so I just used real onions and sauteed those while browning the beef)
1/2 box ww macaroni noodles (if there is such a thing as ww shells, you could use those)
8 oz lite Velveeta cheese
1/4 cup reduced fat Sour Cream
1 cup chopped tomatoes (about 1 large) (I used canned tomatoes)
1/4 cup sliced green onions (optional)

BROWN meat in large skillet; drain. Return meat to skillet.
ADD milk, ketchup, mustard and onion powder; mix well. Bring to boil. Stir in pasta; return to boil. Reduce heat to medium-low; cover. Simmer 10 min. or until pasta is tender.
STIR in Cheese Sauce and sour cream until well blended. Add tomatoes and green onions; mix well.

I've got this going on the stove right now - and it does make a bunch! Going to help this week with groceries - as will the salmon and redfish that I am stealing out of my parent's freezer (Salmon caught by Granny in Alaska and redfish they are catching today in the gulf!)

I'll bet you could serve the meat/cheese mixture over lettuce or have it as side with a salad instead of noodles on P1 and that would still taste yummy!

Hey Carla: This looks awesome and I've been meaning to try it! Do you know approximately how many servings this recipe is? I am the only one that will be eating it this week, and I am wondering if I should split it... or if I can eat it over 2-3 meals this week.
