Buttermilk pancakes

This is just the buttermilk pancake recipe from the Joy of Cooking with SB substitutions.  They are light, fluffy, and delicious!  6 grain servings per recipe.


Buttermilk Pancakes


1 cup whole wheat flour


1/2 cup whole wheat pastry flour (ok if don't have, just use regular ww flour)


3 T Splenda


1.5 t. baking powder


1/2 t. baking soda


1/2 t. salt


1.5 c. lowfat buttermilk


3 T melted Smart Balance


2 large eggs


1/2 t. vanilla


Whisk dry ingredients together in a large bowl.  In a medium bowl, whisk wet ingredients together.  Pour wet ingredients onto dry, whisking just until combined.  Pour pancakes onto hot griddle/skillet with scant 1/3 cup measure for 12 pancakes.
