Whats your favorite SB dinner?

I'm constantly searching the archives for recipes but they don't always have reviews. If its something unusual without a review, I'm usually afraid to try it.


My DH is sick of the same foods (especially chicken but its my favorite) so I'm looking for ideas.

First off, I have to say the cupcake pics of your son are precious! He eats his cupcakes just like I do! :o)

It's hard to pick just one favorite meal. My *new* favorite is the chicken satay patties that Cathy posted in the recipe section recently (only I made them w/ ground turkey b/c that's what I had on hand)--they are REALLY good! Another one of my favorites, which your DH might like, is grilled flank steak w/ caramelized onions & balsamic glaze--check the recipe section, I'm sure I posted it awhile back.

We also love soups and chilis, but don't do much of that in the summer.

grilled flank steak (we marinate it in cheap Italian dressing) with either grilled veggies (zucchini, broccoli, red onion, mixed peppers) or roasted asparagus, and baked sweet potato fries. Yummers!!

Also love this:

TANDOORI CHICKEN
1 c. nonfat plain yogurt
1⁄4 t. cinnamon
1⁄2 c. minced onion
1⁄4 t. black pepper
1 1⁄2 T. lemon juice
1/8 t. ground cloves
1 T. minced garlic
1 1⁄2 t. paprika
1 t. cilantro
1 t. kosher salt
1⁄2 t. cumin
1⁄2 t. ginger
1⁄2 t. turmeric
1 lb. boneless, skinless chicken breasts
1 large thinly sliced onion

Place all of the ingredients in the crock-pot on low for 8 hours. Enjoy!

This is one of my faves! We use Hatch chilis from NM (I can get them frozen here at WM in TX) so it's too hot for the kids, but I just boil extra chicken for them to eat plain. My DH salivates when I tell him I making this for dinner!

Chicken Chile Verde
2 cans (15 oz) Cannellini Beans
3 C chicken broth
1 garlic clove, minced
1 tsp salt
2/3 c chopped onion
2 c cooked cubed chicken, pan fry seasoned with garlic powder, s & p
1 4 oz can chopped green chiles
1 tsp cumin
1 tsp dry oregano
1/16 tsp cloves
1/4 tsp cayenne pepper
2 T corn starch (you can also use arrowroot same amount)
1/4 c water
Shredded cheddar
In large high sided frying pan, combine the first five ingredients; bring to boil. Reduce heat; add chicken, chiles, and spices. Simmer 10-15 minutes. Combine cornstarch and water; stir into chile mixture. Simmer until thickened. Serve sprinkled with cheese.

Wow - I couldn't pin one or even two or even a dozen of my "favorite" meals. I really like a lot of variety and experimenting, so we will often go 6 or 8 weeks before I repeat a meal.

Some "constants" that I know I can make with my eyes closed, one hand tied behind my back and when its been a week since I've been to the grocery store would be sauteed chicken breast or pork loin w/a reduction sauce. I sautee the meat on super high heat getting a really golden crust on it. Then make a sauce with anything I have on hand - I almost always base it with garlic or onions, then white wine to deglaze. Then I add stock and whatever flavors I feel like (or have on hand) could be dijon mustard, lemon/lime, soy sauce, worcestershire sauce, tomatoes, balsamic vinegar - NOT altogether, I may do lime and soy or tomatoes and balsamic, etc. Then some herbs depending what I threw in. I reduce it down to a gravy/syrup and back on the chicken/pork.

Just super quick and easy and versatile.

As Cathy posted, salsa chicken is one of my favorites. I do it just like hers, but I add a can of kidney beans to mine with the salsa.
It's wonderful the next day heated up then wrapped in a ww tortilla. Yum yum.

We also do a lot of stirfry. It's a tasty way to get lots of veggies in. You can eat it plain (as I do) or serve it over brown rice (which is what DH does.)

Other favorites are chili and the new cheeseburger mac recipe I posted not long ago. MMm mmm.
