I found this recipe on the Soy Slender Web site...

Chocolate Pancakes

INGREDIENTS:
1 cup unbleached flour
2 teaspoons baking powder
1/2 teaspoon salt (optional)
3 Tablespoons sugar or honey
1 cup Lite Chocolate Soymilk
1 egg or egg substitute
2 Tablespoons Hain® Safflower Oil

In a large bowl, stir together all dry ingredients. In a separate bowl, stir together liquid ingredients. Pour the soymilk mixture into the flour mixture and stir until a smooth batter is achieved. Lightly oil a griddle or skillet and heat over medium heat. Pour batter onto griddle and cook until pancakes are bubbly on top; turn and cook until browned. Makes 12 to 14, 4-inch pancakes.

I was thinking I could use wheat flour, splenda instead of sugar and canola oil instead of safflower. Would that all make this a legal recipe? Also, if it makes 12 pancakes, how many would 1 grain serving be?

Sorry for all of the questions! I am slowly figuring things out.

Yes, this recipe would be ok with the substitutions.

I made these before - I wasn't overly thrilled. Mine turned out kind of dry and not "fluffy" like I like my pancakes. I was thinking that thinning out the batter and turning them into crepes (filled with some fruit and sugar-free jam) would be good though. Just never got around to trying it that way.

Good to know! I am not a huge pancake freak, but I am always looking for options... I wonder why they were dry? Bummer!
