I found this recipe on the official SB Web site (I was just looking at the sample recipes). But how does this fit in to your menu? It said it was P2 & P3. It has no flour, so I am assuming it doesn't count toward your grain intake --- so is it a sweet treat? But 1 serving is over 100 calories?

Please advise... because I am wondering if it's even worth trying. Thanks!

Peanut Butter and Jelly Cookies

Prep time: 15 minutes
Cook time: 14 minutes

12 Servings

Ingredients
3/4 cup granular sugar substitute
1 large egg
1 teaspoon vanilla extract
1 cup creamy trans-fat-free peanut butter
1 teaspoon baking soda
1⁄4 cup sugar-free jam, any flavor

Instructions
Heat oven to 350°F. Line a baking sheet with parchment paper.

Mix sugar substitute, egg, and vanilla together with an electric mixer on low for 3 minutes. Add peanut butter and baking soda. Mix on medium until dough comes together, about 30 seconds.

Form dough into 24 (2-teaspoon) balls and place on baking sheet 1 inch apart. Gently press your thumb into the center of each to make an indentation. Fill each indentation with 1¼2 teaspoon jam.

Bake until lightly browned on the bottom, 12 to 14 minutes. Transfer to a wire rack to cool completely.

140 calories
11 g fat
2.5 g saturated fat
6 g protein
7 g carbohydrate
1 g dietary fiber
210 mg sodium

I would do the math to determine how many TBS of peanut butter are in each cookie. That would count toward your nuts for the day. Then determine how many calories of SF jam/cookie (based on the jar and amount you used). That would count toward sweet treats.

Like I said, it's not something I'd have a lot, but if it's just a matter of SF jam and measuring nuts, it might be worth a try.
