Mini Eggplant Pizzettes (P1)

INGREDIENTS

- 1 eggplant - 3 inches in diameter, peeled and cut into 4 half-inch thick slices
- 4 teaspoons olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/4 cup pasta sauce
- 4 ounces Canadian bacon (optional)
- 1/2 cup shredded part-skim mozzarella cheese
DIRECTIONS
- Preheat the oven or toaster oven to 425 degrees F. Brush both sides of the eggplant with the oil and season with the salt and pepper. Arrange on a baking sheet and bake until browned and almost tender, 6 to 8 minutes, turning once. Spread 1 tablespoon of pasta sauce on each eggplant slice. Top, if desired, with the Canadian bacon (optional) and shredded cheese. Bake until the cheese melts, 3 to 5 minutes. Serve hot.
This recipe is optimal for Phase 1 of the South Beach Diet.

Looks yummy! I like the idea of the Canadian bacon with eggplant. Your kids eat these...I'm impressed!
THey are circles. My kids love to eat food that looks cool... I have a knife that cuts crinkly edges and stainless steel cookie cutters in all sizes from teenie tiny teardrops to bigger than needed to cut a sandwhich and we cut everything up into shapes.
Here's what mine look like the first time I made them (and just now I ate like half the eggplant's worth of them SUCKED them down standing over the pan lol) (the toppings below are canadian bacon, RF cheese and mushrooms)
Bumped up for some curious beachers...
BTW - it is not as involved as the recipe makes it seem and I also don't use an vegetable oil I just peel, slice and put in the oven, then take them out turn them over and top them, back in the oven.
LOVE them, I eat them once/twice a week. YUM YUM YUM
Train up a child according to his bent...
I made these last weekend for lunch and DH and I really enjoyed them.
