Asian Rice Salad With Peanut Sauce

(with appropriate South Beach substitutions)
The peanut sauce can serve double duty: It also makes a great dip for vegetables.
4 cups cooked brown rice
1 small red bell pepper, finely chopped
3/4 cup chopped cashews or peanuts
2 large carrots, peeled and grated
2 scallions, sliced into thin rounds
1 cup snow peas or snap peas, finely chopped
3 tablespoons *natural* chunky peanut butter
2 tablespoons sesame oil
1 tablespoon grated or finely chopped fresh ginger
3 tablespoons rice wine vinegar
1/4 cup vegetable or peanut oil
1 tablespoon reduced-sodium soy sauce
Instructions
Mix the rice, bell pepper, nuts, carrots, scallions, and snow peas in a large bowl until well blended. In a separate bowl, mix the remaining ingredients with a fork until smooth. Pour most of the dressing over the rice mixture and stir to combine. Taste, and add the remaining dressing, if desired. (Makes 8 servings)
