I'm making one tonight from the SB Cookbook (the orange-ish one). Do you want me to post the recipe for you?
I did get that cookbook from the library. Thanks for the offer... I didn't have the brown rice. Also, I don't have a family recipe. We never really had meatloaf as a kid! I just found one someone else had posted on the site and sort of winged it... it had carrots, zucchini, 1 slice of WW bread (made into crumbs) and 1 egg. Wish me luck... it should be finished soon.
:)

I guess we posted at the same time. Your recipe sounds fine. I'm sure it will be delicious!
It was pretty good... I should have added more spices. I shouldn't be afraid to play around with stuff like that!
Thanks for the recipe anyway. I appreciate it.
I know its too late for this time, but here is the recipe I've always used and everyone loves it. Its VERY basic and with things that I always have in the pantry.
1 lb ground beef or turkey
1 cup oatmeal
1 egg
2 cup spaghetti sauce
1 tsp garlic powder
1 tsp onion powder
1/2 bell pepper chopped (optional)
1 T worschestire sauce
Combine meat, oatmeal, egg, 1 cup of spaghetti sauce, onion powder, bell pepper,
worschestire, garlic powder, salt and pepper. Put in loaf pan. Bake, top with remaining sauce last 15 minutes.

Karen,
How was this meatloaf?
The meatloaf was pretty moist ~ the brown rice was a nice substitution for the usual bread crumbs. I used only ground turkey (no beef) so it could have used more flavor. So, next time I might add some additional garlic, some chili powder, and some cumin.
