My favorites are: broccoli, red onion, zucchini, red bell pepper, asparagus, eggplant

We roast carrots, brussel sprouts (usually w/pearl onions), asparagus, green beans, cauliflower, peppers, sweet potatoes, squash (though it doesn't really get the "brown and crispy" thing the others do due to high water content - but its still easy/adds flavor to roast it)

BTW, I never made a frozen veggie in my life (except for frozen broccoli with cheese sauce) until the members here convinced me to try roasting frozen veggies. I put them in the oven frozen (after drizzling with EVOO and seasonings) and they turn out great. I have broccoli or cauliflower done this way almost every night --- I love it! Delicious, convenient, and I don't have expensive produce going bad in my fridge all the time.

I found a great zuccini, squash, tomato and onion mix in the freezer section. I love tossing them with EVOO and rosemary and garlic and roasting them.
We've been putting them on the grill too (on tin foil)
