Roasted Garlic Turkey Burger with Portobello Mushrooms

Serving: 4
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

1 tbsp. olive oil
6 cloves garlic, peeled
1 red onion, thinly sliced
6 ounces Portobello mushroom, thinly sliced
1 tbsp. balsamic vinegar
1 lb ground turkey breast
1 tbsp. Dijon mustard
1 tsp. dried rosemary, crushed
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. blue cheese, crumbled
4 whole wheat rolls, optional

1. Prepare grill for direct-heat cooking and remove grate.

2. In nonstick skillet over medium-high heat, heat oil. Add garlic cloves and cook until lightly browned. Turn cloves as needed to evenly brown. Remove to cutting board to cool, leaving oil in skillet.

3. In skillet, cook onion slices in remaining oil until tender. Toss in mushrooms and cook until tender. Add balsamic vinegar, stirring until almost evaporated, about 30 seconds. Remove from heat and allow to cool slightly while you prepare burgers.

4. Mince garlic. In medium-sized bowl, combine garlic with turkey, mustard, rosemary, salt and pepper. Shape into 4 burgers about 4 inches in diameter.

5. Spray grate with cooking spray and place over hot coals. Grill burgers about 5 minutes per side, or until no longer pink in the middle (165 degrees F).

6. Place burgers on whole wheat rolls. Stir blue cheese into mushroom mixture and spoon on top of burgers.
