Made this last night, and it was really good. The dressing definately has a kick to it--I added a little more lime juice and a tiny bit of water to thin it out. I served the kids' with ranch dressing instead, and the LOVED it! :o) (Any salad my kids will eat is a winner!)
Chipotle Chicken Taco Salad
The creamy dressing mellows the heat from the chiles. Add a spoonful of adobo sauce for a spicier salad. Kidney or pinto beans also taste great in this dish. Total time: 34 minutes. Rating: *****
