Blackened salmon patties

These were awesome.  I abhor canned salmon, so I tried it this way and had a hit!  Based on a Kraft magazine recipe from several months back, but much more tasty this way...

 

2 blackened salmon fillets (I got them from Sam's...could also use regular salmon w/ blackening seasoning), cooked and flaked

1T lemon juice

1/3 c. reduced fat mayo

1/3 cup asiago cheese

crushed ww crackers like All Bran garlic and herb flaver, enough to measure 1/2 cup

1/4 cup water

thinly sliced green onions, optional

 

Heat non-stick skillet over medium heat.  Gently mix all ingredients.  Form into small patties.  Cook 3 minutes on each side, till nicely browned.  Serve with tartar sauce, or lemon juice.
