This is oldie but goodie, but I've added a little kick and we think it's great!!!
Unstuffed cabbage crockpot supper
1 pound ground beef (I use ground turkey breast)
1 small onion -- chopped
4 cups chopped cabbage (I just chop 1 whole cabbage and toss it in)
1 green pepper -- chopped (optional)
1 cup cooked brown rice
1 cup water/chicken broth
6 ounces tomato paste
15 ounces diced tomatoes (+ 1 can Rotel tomatoes)
2 Tbl.s vinegar
2 packets Splenda
1 Tbl. Worcestershire sauce
1 1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
Brown beef and onion in skillet; drain well. Combine all ingredients; cook on low for 4-5 hours.
My family loves this recipe. Hope you like leftovers, because it makes alot!!! The first time I made this, I had a can of Rotel tomatoes in the pantry and didn't know what else to use it for, so I just put it in with a regular size can of tomatoes. I've never made it without the Rotel tomatoes because we loved the spicey kick so much.
Just thought I would share this with you all. I know it says to cook on low for 4-5 hours, but it does fine on high for that same length of time. You might have to open the lid and stir it a few times tho, as the cabbage cooks down.

I thought so too, but we love it so much that I fix it about once every 6 weeks or so!!! What I like most about it (from a SB point of view), is that it contains lots of veggies, meat and a grain all in one recipe. Sometimes I forget about having a grain serving for dinner. So this recipe takes care of that easily.
