Salmon with pine nuts, pesto, & spinach

I made last night the SB salmon recipe from the (blue) South beach diet book. It was salmon fillet stuffed with spinach, pesto, pine nuts, and sundried tomatoes - YUM!!

I couldn't really 'stuff' the salmon fillets well, so I stuffed as much as I could, and then just placed the remaining mixture ontop of the fillets and baked it in the oven (on a parchment covered baking sheet). It was amazing. My husband who is not a big fish eater, really gobbled this up. I served it with asparagus, brown rice pilaf and mock hollandaise. Good enough for company!

4 salmon fillets
salt to taste
fresh ground pepper to taste
1 package (10 oz) baby spinach, chopped
2 Tablespoons prepared pesto
1 Tablespoon chopped dry-packed sun dried tomatoes
1 Tablespoon pine nuts ( I added 2 Tablespoons)

heat the oven to 400F. Make a slit two thirds of the way throuh the centre of each fillet making sure ot to cut all the way through. Season each fillet with the salt and pepper. In a bowl, combine all the remaining four ingredients. Spoon 1/3 cup of the mixture into each slit (This is where I just placed ontop whatever mixture I couldn't stuff into the salmon)
Arrange the fillets on a broiler pan coated with cooking spray. Roast for 8-10 ninutes.

did you use frozen or fresh spinach?

Ooopss... I didn't clarify that in the recipe, did I? I used fresh, as the recipe originally called for. I dont' see why one couldn't use frozen though, if that's what you have on hand. (Just defrost it first...)
