1) Swordfish on the grill. YUM. I love to get it fresh from the fish market, spray a little Smart Balance butter spray on it, add a little pepper and plop it on the grill.
2) VEGGIES! I stuff one of those aluminum foil bags that you can put on the grill (of course, now I can't find more anywhere!). My favorites are cherry tomatoes, zucchini, squash, various peppers and onions. Sometimes I add a little Good Seasons dressing... sometimes just some butter spray.
we do as much as we can on the grill -- it doesn't heat the house up (yuck, going to be 93 degrees and humid today).
Chicken, steaks (more for hubby) and I do a lot of fish in foil -- put in some veggies, lemon a little water so they don't dry, and top shelf they go. Depending on the type of veggie, they either go right on the grill, or I have one of the grill frying pans, with holes in it. Hubby will even eat veggies that way!
Lots of salads -- and I still make a crock pot of vegetarian chili every other week. Put in individual containers and freeze, for the nights we don't feel look cooking, or even lunches.
Summer is nice with all of the "new" fresh fruits in the market that aren't as good in the winter.
I recently discovered a "healthy" Lebanese restaurant by my office. Two items they have on the menu that I frequently copy at home are:
Lebanese Salad Diced Cucumber, Red Onion, Tomatoes, Green Pepper, Garlic with EVOO, Lemon Juice, Mint, Parsley, Oregano. Toss and refrigerate to let the flavors combine. This is delicous stirred into hummus or tabouli or just plopped over fresh greens with a sprinkle of fresh feta.
Grilled Eggplant: Their eggplant is unique becuase they don't salt/sweat it first. They just cut it very thin (about 1/4 inch slices) marinate it in EVOO for about an hour. Season with salt, pepper and garlic and grill over an open flame. It's delicous because it's slightly mushy but with that roasted flavor. I can't get ENOUGH of this eggplant and I'm not a big fan of squash....
I also LOVE shish-ka-bob. I make mine with fresh chicken or steak and skewer it with cherry tomaotes, green pepper, red onion and fresh mushrooms! So yummy served with fresh green beans.
I've been eating a lot of strawberries sliced with a sprinkle of balsamic vinegar. It creates that delicous sweet and savory flavor.
I also do alot of grilling because it gets too hot to cook inside in our apartment! Love to do a shrimp skewer marinaded in fresh lime juice, cilantro, EVOO, and a little bit of garlic.
We also really like pasta salad and just yesterday made a veggie pasta salad with whole wheat fusilli that someone posted on here with lots of veggies. Really good! Took it to our father's day cookout at my sister's house and everyone loved it!!
We do alot of grilling in the summer, so things like burgers (buffalo, beef, or turkey), chicken breasts, and pork chops are popular. I love to do kebabs, too, with meat & veggies. Other summer favorites here are wheatberry salad, cold soba noodle salads, and fish. BLT's (w/ turkey bacon) are a quick dinner we have once in awhile, too. And lots of fresh fruit. :o)
