P1 - Zucchini Pancakes

ZUCCHINI PANCAKES


1 Medium Zucchini, grated


1/4 cup finely diced onion


2 eggs, beaten


Combine all ingredients and spoon into a heated non-stick skillet.  When pancake has set and the underside is golden, flip and cook the other side.  Makes about 3 large pancakes.  Serve with yogurt/dill dip or homemade salsa.


YOGURT DILL DIP


1 small container of plain reduced fat yogurt


1 tsp dry dill weed

The conversation continued w/ me commenting on "fresh" dill weed and him saying something crude about how yeah that was his brother thinking he was going to "get some" lol nuts I swear.

I am going to get some dry dill weed at the store tomorrow and try this dip out on my kids.

I just made this for lunch. I added about 1/2 cup of parmesean and some garlic salt

Ooooooookay. I finally made these.

I had a FAB time grating my zucchini and onion.... but then I made them and did NOT Like them at all!! I don't get it - I should like them - I love all the ignredients... but yuck. I threw them all away. :-(

If you're up for trying it again, substitute red onion or scallions for the white onion (less harsh) and add about 1/3 - 1/2 cup of grated parmesan cheese. If you like it spicy, add some red pepper flakes and a sprinkle of garlic powder. Much more flavorful and really tasty any time of day (makes a great snack). I never have put the sauce on them.

The other thing I suggest is squeezing the zucchini after you grate it, in order to express all the water. I just take a handful at a time and squeeze it really hard over the sink. It really helps with the overall texture of the pancakes.
