Salmon Burgers

I served these on whole wheat hamburger buns along with home made cole slaw and sweet potato fries. I also used 1 whole egg instead of just the white. They held together better that way.

Dress the burgers with lettuce, tomato, and your favorite condiments. Serve on toasted focaccia or hamburger buns with a simple fruit salad.
1 cup finely chopped red onion
1/4 cup thinly sliced fresh basil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 (1-pound) salmon fillet, skinned and chopped
1 tablespoon hot pepper sauce
1 large egg white
Cooking spray
Combine first 5 ingredients in a large bowl. Combine hot pepper sauce and egg white in a small bowl; add egg white mixture to salmon mixture, stirring well to combine.
Divide the mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add salmon patties, and cook 3 minutes on each side or until desired degree of doneness.
Yield: 4 servings (serving size: 1 burger)



I made these tonight, I used a whole egg as Cathy suggested. I skipped the hot pepper sauce. I served with Dana's black bean dish and a lettuce salad. No bun or anything. Actually, it would have tasted good topped with Dana's black bean dish! My two year old liked them, she ate a whole one. My four year old did not like them. My six year old ate them after he pretended he was an eagle eating salmon from the river.
That's a quorum!

I should add DH and I really liked these better than the "salmon patties" I usually make with canned salmon -- WAY better! I just had the leftover for lunch topped with the leftover bean dish and it was super good.
I made the burger mix in my food processor and grilled them in my foreman grill (I don't like flipping things).
Another keeper! I'm going to have to figure out how to organize my recipes here, so I don't lose track of these goodies.

hi teresa...these sound good! stupid question though...is the salmon already cooked when you chop it? I'm thinking it is, but it didn't say "cooked" salmon.
I like how you served it with the beans...I'm going to steal this idea for a meal next week.
It wasn't cooked when I chopped it -- I used fresh salmon. I think that is why I liked it better than the recipe I have that calls for canned salmon. It chopped up no problem in my food processor, and I had no trouble taking the skin off.
If Cathy checks in , hopefully she can clear this up.

Yes, use fresh raw salmon.

Made these tonight...they turned out great. DH loved them too! I kept the hot pepper sauce and subbed parsley for basil. Thank you Teresa for the idea of putting it all in the food processor...was having a time chopping that salmon. I made it all early in the afternoon and kept it in the fridge until it was time to cook up.
Have some leftovers for lunch tomorrow, yum.
I mixed them up early and kept in the fridge as well (I hardly recognized myself in that moment, but was very proud)!

me too! In less than a half hour this afternoon had dinner totally prepared...made it so much easier on me later. I've got so many leftovers this week that all I had to do was figure out how to eat them tomorrow, had to get creative w/ leftover chicken breast for dinner. so proud of myself!
oh...and I ate my salmon burgers w/ dijon mustard, loved it this way.
