I need recipes that use radishes!! I have an overabundance of them in the garden. Wet weather - couldn't thin them out. Yipes!!

Firecracker Salad
1 tablespoon sesame seeds, toasted
2 tablespoons distilled white vinegar
2 teaspoons of sugar substitute
1 teaspoon of minced fresh ginger root
4 teaspoons Kikkoman soy sauce
1 cup julienne-stripped radishes
1 cup julienne-stripped cucumber
4 cups finely shredded iceberg lettuce
1 1/2 teaspoons minced fresh cilantro or parsley

Measure sesame seeds, vinegar, sugar substitute, ginger and soy sauce into a jar with a screw-top lid; cover and shake well until sugar dissolves. Combine radishes, cucumber, and 3 tablespoons dressing; cover and refrigerate 30 minutes, stirring occasionally. Toss lettuce with cilantro in large bowl. Pour radish mixture and remaining dressing over lettuce. Toss lightly to combine. Serves 6

ROMAINE SALAD WITH PITA CRISPS AND SESAME
2 whole-wheat pitas (6" diameter)
1/2 teaspoon dried oregano, divided
3 tablespoons pine nuts
2 teaspoons sesame seeds
2 tablespoons extra-virgin olive oil
5 teaspoons fresh lemon juice
1 small garlic clove, crushed through a press
1/8 teaspoon ground paprika
1/4 teaspoon salt
6 cups sliced romaine lettuce
1 cup chopped red and green bell peppers
1 cup whole small radishes
1 cup cucumber chunks
1/2 cup coarsely chopped fresh flat-leaf parsley
3 green onions, whites sliced 1/2" thick and greens sliced 1" thick

Preheat the oven to 4250F. Split the pitas in half to form circles. Place the rounds rough side up on a baking sheet and sprinkle with 1/4 teaspoon oregano. Place the pine nuts and sesame seeds in a small baking pan or ovenproof skillet. Bake the pitas for 5 minutes, without turning, until crisp and toasted. Bake the pine nuts and sesame seeds for 10 minutes, stirring twice, until browned. Remove from the oven. Leave the pitas on the baking sheet. Tip the nuts and seeds into a bowl. Let both cool. When the pitas are cooled, break into rough 1" chunks. In the bottom of a large salad bowl, use a fork to mix the oil, lemon juice, garlic, paprika, salt, and the remaining 1/4 teaspoon oregano. Add the romaine, bell peppers, radishes, cucumber, parsley, and green onions. Toss to mix well. Add the toasted pitas and the pine nuts and sesame seeds; toss again. Makes 6 first-course servings.

PAD THAI NOODLES
4 ounces dried Thai rice sticks*
3 tablespoons vegetable oil
8 ounces uncooked chicken breast
3/4 cup 1/2-inch pieces firm tofu (about 6 oz)
1/4 cup finely chopped radishes
2 teaspoons paprika
1 large egg, beaten to blend
2 cups mung bean sprouts
2 c. green onions, in 1-inch pieces
1/4 cup fish sauce (nam pla)*
3 tablespoons rice vinegar
4 tsp sugar substitute
1/4 cup finely chopped roasted peanuts
Lime wedges

Soak dried rice sticks in large bowl of warm water until just tender, about 1 hour. Drain rice sticks well. Heat oil in large nonstick skillet over high heat. Add shrimp; stir-fry until pink and opaque in center, about 2 minutes. Transfer to plate. Add tofu, radishes, and paprika to skillet; stir-fry until tofu browns, about 2 minutes. Add egg; stir until set, breaking up with spoon, about 1 minute. Add drained rice sticks, mung bean sprouts, green onions, fish sauce, rice vinegar, and sugar. Stir-fry until heated through, about 2 minutes. Transfer to serving dish. Top with chopped peanuts. Serve with lime wedges.

Man, I wish I was in Dallas. I ADORE radishes; would probably eat half a bunch a day if I had them. I'm jealous! Mine were good while they lasted but I didn't plant nearly enough. Enjoy!

thanks all! the firecracker salad sounds awesome!! I can't wait to try one or two of these recipes. I've always only put them, sliced, on my salads. Well, when I was a kid we ate them raw all summer but I've lot my taste for them a bit.

I used the square foot gardening method. What you are SUPPOSED to do is plant two seeds per location (radishes are 12 per square foot) and then trim out the weaker plant once they sprout good. It has been SOOOO rainy that I never went out there and, well, looked the other day and 48 radishes were peaking up out of the ground already!! some quite large.

We also have bush beans (flat green beans) that I'm harvesting now. I planted late by 3-4 weeks so those are my only harvests except for a few peppers. I NEED to get the next round planted but, dude, it is storming again today. I think we've had a year's worth of rain in 3 months. Which is great because we were in the 3rd year of a drought. But I'm a bit tired of it.

Anyways, deb, thank you for thinking of me. I think I'm feeling the prayers sent up for me. It isn't getting better. Well, not really. And our counseling session was canceled for tomorrow because of illness. (dr has pneumonia) Very frustrating. However, I am in size 14s, I'm not losing muscle, only fat, and I feel pretty good considering that I'm really only eating half of what I should some days. I'm doing better though. Went to Olive Garden sunday and had the grilled salmon and veggies and the big ole salad. Yum! I love me some salmon! I can't wait to be in size 12s!! It may be a couple of months but it will sure be exciting. 10 more pounds and I'll weigh less than dh. (may stand for dumb husband today) And HE has lost 10 lbs.

Hope things start to get better for you soon.

I have not tried this recipe yet, but DH loves radishes, so I grabbed this off of Food Network. It's a Rachael Ray recipe.
