Banana Rhubarb Muffins

Ingredients:
2 Egg whites (used Egg Beaters)
2/3 c Skim milk
1/4 c Unsweetened Apple Sauce
1/4 c Canola oil
2 c Whole Wheat Flour OR Oat flour blend
1/2 c Sugar Substitute (Splenda)
1/2 c Mashed ripe banana
1 Tbs Baking powder
1/2 tsp Salt
1/4 tsp Nutmeg
1/4 tsp Cinnamon
2/3 c Chopped fresh rhubarb or frozen rhubarb, thawed and well drained

Procedure:

Preheat oven to 400 F.
Spray bottoms of 12 muffin pan cups with vegetable cooking spray or line with paper baking cups.
In medium-sized bowl beat egg whites with fork; stir in milk and oil. Add remaining ingredients except rhubarb, mixing just until flour is moistened (batter will be lumpy). Fold in rhubarb.
Divide batter among prepared muffin cups, filling to top.
Bake 20 to 25 minutes, or until golden brown.
Immediately remove muffins from pan; cool on wire racks.

*NOTE* If you want to make this into a bread, double the recipe and use 2, 9" bread pans and cook for approx 10 more minutes. Remember if using a dark coated pan to reduce the oven temperature by 5 degrees to prevent the crust or edges from burning.

I hope you like them! I was thinking if I make them again I might add a touch more splenda and maybe some walnuts. You will have to let me know what you think! :)
