Mexican Penne

lb lean ground beef

1/2
box whole wheat penne pasta, cooked as directed (1/2 of 1 lb. box)

2 (16
ounce) jars salsa

1 (15
ounce) can black beans, drained

2
cups low-fat Mexican blend cheese, shredded (or sharp cheddar)


  1. Heat oven to 350*.
  2. Brown ground beef in a skillet and drain.
  3. Combine beef, pasta, salsa and beans in a large bowl.
  4. Spread half of mixture in a 9x12 baking dish and sprinkle with half of the cheese.
  5. Repeat layers, cover and bake for 35 to 40 minutes.

This just replaced chili on the upcoming week's menu and my DH is very pleased about it!!!

This is currently baking -- it was easy and it smells good. I'm thinking it will be kid friendly, I'll update shortly!

I had fun telling the kiddies all day when they asked (and they ALWAYS ask) that we're having "Mexican Pennies" for supper. =)

This was kid friendly, yummy and easy to make. You may want to save your grains for the day, so you can have two portions, though! Not fancy, but good for every day type cooking.

I also made this one a week or so ago. It was fabulous and so simple. Just wanted to let you know it is really good topped with sour cream. We usually put sour cream on any dish with Mexican flavors.

My nephew will be coming over this weekend, after sports practice. He is ALWAYS hungry anyway, so after an hour on the ice, he will be famished. Last weekend he liked my homemade spaghetti sauce with spiral noodles, so I'll throw this together for him.

I split it into 6 servings and it seemed like a good amount. This dish was awesome! I will definately make it again! Thanks!
