Turkish bulgur salad (kisir)

This is a Turkish recipe something like tabouli, except it's spicy and has lots of veggies and no mint. It was given to me by a Turkish woman several years ago, and I have altered the recipe as you see from the notes below. This recipe makes a TON but it lasts a few days in the fridge. I usually halve the recipe (although I put in more than half the veggies) and it makes at least a quart. I'd guess a cup is about one grain serving, but that's just a guess. Afiyet olsun (bon appetit)!

Kisir

2 c bulgur
1 medium onion, finely chopped
3 – 4 green onions, finely chopped
1 large or 2 medium tomatoes, finely chopped
1 cucumber, finely chopped
1 c chopped parsley
2 – 3 c chopped Romaine lettuce
1/3 c olive oil (I use a bit less, probably 1/4 c)
2 – 3 T tomato paste or pepper paste
juice of 1 lemon
1 T paprika
1t black pepper (recipe calls for 1 T or to taste)
1 T sumac (a powdered spice --- omit with no problem)
1T salt
1 t cayenne pepper (recipe calls for 1 T or to taste)

Soak bulgur with 2 c warm water for 15 min, covered. It should be chewy, but if it's still too crunchy, microwave it for a minute loosely covered and allow to cool some before adding the veggies.

First add onions, then tomato or pepper paste, then herbs and spices. Mix well.

Add remaining ingredients and mix well.

Let sit for at least 20 minutes in refrigerator to cool and blend flavors.
