If a recipe calls for a food processor (ie Mock mashed potatoes), would a blender do the trick or is a food processor reall necessary? or is it ok to substitute in some recipes but not others? i really don't want to go out and buy one if its not necessary.

Normally I would suggest that you just use what you have on hand.

to make my fauxtatoes. It works really well and I can use it for doing dips and stuff too. The one I have is similar to this one

and I use it to make my pesto and other dips with the little mixer/food processor attachment. To make the fauxtatoes I use the regular handle attachment with a standard bowl. To make pesto and dips I use the food processor attachment. I've used the whip a couple of times to make fresh whipped topping (not SBD though I've heard you can do this with evaporated milk).
I have a small kitchen and already several other large appliances, I didn't need another thing to store! So this works great. It came with a rack that I installed inside the cabinet door for storage. :)

(p.s. I like to add garlic and or worchestershire sauce to my fauxtatoes)
