Every time I make rice, my stove is a MESS. No matter which pot with a tight fitting lid I use, I have white gummy residue all over my stove. I have 6 burners and it spreads to about 4 of them making it a HUGE clean up. ARGHH!!
My husband came from a family who constantly had rice cooking and they had it with every meal (he's Filipino), so we registered for a rice cooker because I had never successfully cooked rice before. You should really consider getting one. They are super easy to use and to clean up, and they are pretty inexpensive.
Just wanted to let you know that the last time I made rice I made a ton of it and then froze portions in ziplocs. The packages are very easy to defrost and reheat - and alot less mess to deal with.
I also love my rice cooker. Its the kind with a timer and auto settings for different types of rice. Not only does it perfectly cook rice without mess, I can set the timer before I leave the house in the morning and have warm, fluffy brown rice when I get home at night. Without this, I'd never be able to have home cooked brown rice on week nights because I get home too late. It took a few experiments to get it just right; since the rice soaks all day it cooks faster. So, I set the brown rice to cook on the "semi brown" setting (instead of "brown") and it comes out perfectly every time. The rice cooker can also make whole grain hot cereals that are waiting for me when I wake up! These devices can be costly, but maybe worthwhile for everyone who make lots of rice and hot cereal.
I'm thinking of using your baked rice method for my dinner party tonight. Do you think I can bake it ahead of time in a covered casserole and then reheat it in the microwave when it's time to serve it? Maybe if I add some chicken broth to it before putting it in the microwave?
