We had some friends over last night for dinner, *almost* the whole menu was SBD-friendly (grilled chicken skewers, grilled asparagus, this salad - but we did also grill some corn) Everyone raved over the salad, it was super easy and VERY pretty.
I don't have exact amounts as I just threw it together...
1 can black beans, drained and rinsed
1 red bell pepper, diced fine
1/2 red onion, diced fine
1 cup mango, diced fine
1 avocado, diced fine
Dressing:
2 T red wine vinegar
2 T lime juice
1 clove garlic
1/2 tsp dijon mustard
couple pinches of cumin
2 T fresh cilantro
1/2 avocado
Mix together in food processor, after combined - drizzle in olive oil (usually use about a 3:1 ratio for my dressings, so I think I put in somewhere between 1/4 - 1/2 cup)
Toss dressing with bean mixture. Just before serving I dumped a couple bags of lettuce into a nice big, shallow bowl, then scooped the bean mixture on top. Look really neat, everyone was able to take a nice serving of lettuce w/beans on top and then mix it as they ate it.
