Baked Tofu

I'm not vegetarian, but I like to fit soy into my diet where I can. I finally found a great baked tofu recipe I thought I'd share. I typically use it in sandwiches instead of lunchmeat, but you can also save it up and use it in stir fry...I prefer to use baked tofu in stir fry because then it isn't so slimy. Anyway, here it is:
Drain 1 package of extra firm tofu and press by wrapping in a clean towel and setting a saucepan with water on top. Let it set this way for about 1 hour.
Slice tofu into about 1/4 in slices.
Mix together:
5 tbsp water
2-3 tbsp soy sauce (I use low sodium)
1 clove garlic, crushed or minced
1/2 tsp dried rosemary
1/4 tsp freshly ground black pepper
To Bake:
*Preheat oven to 350 F
*Spray a shallow baking pan with nonstick spray
*Arrange slices of tofu in pan, very close together, and pour liquid over slices. Turn slices several times to coat evenly w/ mixture, then spread out so they don't touch
*Bake in oven 15 minutes, turn and bake for 10-15 minutes more until browned
