One-Pan Italian Pasta (P2)

2 lb lean ground beef
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 can (14.5 oz) beef broth
1c water
2c WW bowtie (or other) pasta, uncooked
1 medium zucchini, sliced
1 can (6 oz) tomato paste
1/4 tsp. italian seasoning
1c LF Shredded cheddar
Brown meat with garlic in large skillet; drain. Return to skillet.
Add tomatoes with their liquid, the broth and water; mix well. Bring to boil. Add pasta and zucchini; mix well. Cover. Reduce heat to medium; simmer 15 min. or until pasta is tender.
Stir in tomato paste and italian seasoning until well blended. Sprinkle with Cheese.
Possible variations:
I've made this with only 1 lb of meat (instead of 2) and 2 or 3 zucchinis (instead of 1).
Makes 8 servings, 1c each

I love these kinds of recipes! I'm printing this one....I'm sure my kids would love it!
I'm going to make this tonight. I had originally planned to make shish-kebabs, but it's raining so I'll grill tomorrow.
