Mojitos on the Beach

Phase 1

Serves 1

Ingredients:
Fresh mint
1 lime
1 package sugar substitute
Crushed ice
6 ounces lime-flavored sparkling water

Instructions:
Crush a sprig of mint in the bottom of a cocktail glass. Squeeze the juice of one fresh lime into the glass. Add 1 package of sugar substitute, crushed ice, and 6 ounces of lime-flavored sparkling water. Garnish with mint and serve.

I am SO on this one!! I love this stuff :) Especially since I planted mint in my garden this year for them as well as gyro sauce.

I don't mean to burst anyone's bubble but DH made a mojito for me the other night with Splenda instead of sugar and it just wasn't as good. I don't know if the splenda muddles with the mint as well as sugar. But then we didn't use lime sparkling water either, so maybe that would help...

We make them all the time with Splenda and everyone loves them! We couldn't make them fast enough at a BBQ last week when we had friends over. And these were not "health food" type people - but they didn't know the difference and were guzzling them down!
