Greek Quinoa Salad

I grilled steak & veggie kebabs for dinner tonite, and needed a side dish. I had a bunch of leftover quinoa from making pumpkin quinoa muffins yesterday, so thought I'd go with that. I added what I had on had, and it actually came out really good! I didn't measure anything--just put in what looks good to you. :o)

about 1 1/2 C cooked quinoa
chopped red onion
chopped red pepper
diced carrots
sliced green onion
crumbled LF feta
(would also be good with cherry tomatoes, but I had those on the kebabs instead)

I made a dressing out of red wine vinegar, oregano, sea salt, pepper, a little splenda, and EVOO. Tossed it all together and let it sit in the fridge for about an hour. Yum!

Hey, Dana! --
I made this salad as a side dish tonight (for steak/ red pepper wraps) and DH raved! He just loved it, he ate bunches. I couldn't have been happier. Thank you so much for posting it!!!!!!!! I have plans to make it again along with Andrea's black bean burgers and impress my vegan inlaws a week from Sunday (they eat 85% raw and 15 % cooked, so that would have to be their cooked meal for the day and sort of a cheat, but they do that on occasion). My "self-efficacy" just goes through the roof when these new recipes turn out so great!!!!!!!!! Thanks, again! I forgot to add the carrots, but I don't think we missed them.

edited to ask -- how much of this is a serving?? I treated it like a grain and had a 1/2 cup. Also -- do you think it would 'go' with black bean burgers?? My MIL is a really good cook and I would love to impress. Thanks.

Glad you liked it! I had about 2 cups left over after dinner the other night, and found myself polishing off all of that for lunch the next day! (I figure, at least quinoa has protein, so even though it was a bit more grains than *allowed*, it was a good lunch) It's was even better after sitting in the fridge overnight. :o) Not sure abour pairing it with the black bean burgers, though, since the flavors are so completely different. You could change the dressing up, though, and make it work. Maybe try some lime juice, EVOO or canola oil, cilantro, cumin, salt & pepper, and a little splenda.

You know, that made me realize, I do have a recipe for a southwest quinoa salad. It was the first thing I've ever made with quinoa. It does have lime and cilantro in it. I think I've even posted it here before, I just totally forgot about it. I forgot how much I really like quinoa. I'm going to have to try those muffins. I'm learning it really pays to try new things.
