Please help - don't have SBD books and

we are having company tonight. I lent my books out and am looking for one specific recipe. I *think* it's in the SBD book, but it may be in the cookbook. I made it twice, and from what I remember it has a chicken breast on the bottom, Then mix ricotta with some spices, maybe. Maybe spinach as well, but I don't think so, It has either marinara or possibly crushed/chopped tomatoes over that and finally a slice of mozzarella or maybe provolone. I have all of the ingredients (I think!) but no idea how to put them together. Can anyone help???






Hmmmm....it doesn't sound familiar to me. Have you tried using the advanced search feature? I would search with the word 'chicken' and another main ingredient that you know is in the recipe. Be sure to click the button where you can search from the 'beginning of time' to get better results.

I think you're talking about Chicken Capri? It is in the SBD cookbook but I found a copy online.

A super tasty chicken capri recipe that's great for phase 1 South Beach.
Servings: 4
Ingredients
4 breasts , bone and skin removed chicken breasts
1 cup, chopped or sliced tomatoes
4 slices mozzarella cheese
1 cup ricotta, skim
2 tablespoons virgin olive oil
1/2 tsp, ground oregano
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
Directions
In a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.
Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side.
Place the chicken breasts, side by side, in a large baking dish and allow to cool.
Preheat the oven to 350° F (180° C).
Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each chicken breast with 1 slice mozzarella.
Bake for 20 minutes, or until a thermometer inserted in the thickest portion of a breast registers 170° F (75° C) and the juices run clear.
