I made this the other night (just put it together after looking in my fridge) and it was really tasty, looks good too! I added the cannelini beans to it to make it more of a meal and ate it for lunch. Question: Would this be enough of a lunch or do I need more protein? I wasn't sure if the beans counted as protein or not?

Sauteed Red, Orange, Yellow Peppers with Green Beans and Cannellini Beans

1 Red Pepper (cut in strips)
1 Yellow Pepper (cut in strips)
1 Orange Pepper (I get a tri color pack at Sam's at a reasonable price)
Fresh Green Beans (boil for 2-3 minutes, let cool in ice water for crisp tender) (also I used the French Green Beans - they are a bit smaller)
1-2 Garlic Cloves (chopped)
1 can Cannellini (white) Beans (drained)

Sautee the peppers in a little olive oil and add the garlic while cooking. Once peppers are softened up a bit, add the green beans just to heat them up. Then add the cannellini beans just long enough to blend the flavors and heat up. Be gentle when mixing the beans in, they are very soft and can mush up. Add salt and pepper as you cook and to taste.
