DH is a native so I've finally started trying to incorporate some of his favs from home. These have a slightly different taste from Jamaican rice and beans.


 


Traditional Belizean Rice & Beans


 


1/2 lb. red kidney beans (450g) - I use a 500g or 1 lb bag because that is what is available to me


 


1/2 tsp. pepper (2ml) - I typically use a bit more pepper because the ham does not add as much flavor as a pig tail or salt beef


 


1/2 tsp. thyme (2ml)


 


1 tsp. salt (5ml) - I typically use a bit more salt because the ham is not as salty as a pig tail or salt beef


 


2 plugs garlic (crushed)


 


1 medium onion (sliced)


 


1 cup coconut milk - I use light coconut milk


 


2 lbs. rice (900g) - I use brown rice instead


 


1 small pig tail or salted beef - I use a small to medium sized ham steak instead


 


6-8 cups of water


 


Methods


 


 â€¢   Soak beans for 4-6 hours - I prefer to soak my beans overnight


  


 â€¢   boil beans until tender with garlic, onion, and pig tail.


  


 â€¢   Season beans with black pepper, thyme, and salt.


  


 â€¢   Add coconut milk. Stir and taste. Let boil.


  


 â€¢   Clean rice.


  


 â€¢   Add rice to seasoned beans. Stir, then cover.


  


 â€¢   Cook until water is absorbed or rice is tender. If necessary, add more water gradually until rice is tender.


 


Note: This recipe makes a huge pot! I put most of it in the freezer. I guess you could scale it down to suit you.


 


Some kind of meat (for us it's often stewed chicken or bbq chicken without the sauce), rice and beans, fried plantain and potato salad is a very common traditional meal.

Hi Sheneq,

I saw this in your journal the other day and hoped you would post the recipe!!! This looks really good. I've recently been trying recipes with combos of beans and rice. It makes a really nice side item. And I don't mind cooking up a big batch and freezing some for later!!! Thanks so much for sharing.

I freeze mine in ziploc bags. This dish freezes very well! I love beans and rice. I grew up on Southern food so I love red beans and rice and black-eyed peas with rice, etc.

Sheneq, if you like beans/black-eyed peas with rice, try this recipe. I added a few ingredients to this after making it and I think it turned out really well. And it made alot. I've never tried freezing the leftovers, but I assume it would freeze well. I know some people use this type of recipe as a dip for chips. But by adding the rice, tomato and onion, it makes a really good side dish for just about any meat.

Black Eyed Pea Salsa

1 cup brown rice
2 cups water
2 (15.5 oz each) cans black-eyed peas, drained and rinsed
1 (10 oz) can diced tomatoes with green chili peppers
1 small can diced tomatoes
1 small onion

Bring a small pot of rice and water to a boil. Cover pot, reduce heat to simmer and let cook 20 minutes or until rice is tender. In a large saucepan, combine rice, peas, tomatoes and onion. Stir the mixture over a medium heat until it is heated through. 10 servings.

Note: I added the onion and the can of diced tomatoes to this recipe. It seemed a bit bland without it.

I'm terrible about sharing recipes too. I don't even think about it. I make beans often, not canned ones, but I soak them overnight, etc. It's just something I grew up with and don't really think about I guess.

Well, you would think that since I have lived my whole life in the south, that I would know how to make a good pot of dried beans....nope. In fact, I have never soaked/cooked a pot of dried beans in my life!!! My Mother did that from time to time when I was growing up, but I never was a fan of them back then. DH would probably love it if I fixed a big pot of butter beans, but that would make him want some home-made corn bread also, so I don't want to go down that road!!!

I think I could make the Belizean rice and beans tho. As long as I have a recipe to go by, I'll try almost anything!!!
