DH is a native so I've finally started trying to incorporate some of his favs from home. These have a slightly different taste from Jamaican rice and beans.


 


Traditional Belizean Rice & Beans


 


1/2 lb. red kidney beans (450g) - I use a 500g or 1 lb bag because that is what is available to me


 


1/2 tsp. pepper (2ml) - I typically use a bit more pepper because the ham does not add as much flavor as a pig tail or salt beef


 


1/2 tsp. thyme (2ml)


 


1 tsp. salt (5ml) - I typically use a bit more salt because the ham is not as salty as a pig tail or salt beef


 


2 plugs garlic (crushed)


 


1 medium onion (sliced)


 


1 cup coconut milk - I use light coconut milk


 


2 lbs. rice (900g) - I use brown rice instead


 


1 small pig tail or salted beef - I use a small to medium sized ham steak instead


 


6-8 cups of water


 


Methods


 


 â€¢   Soak beans for 4-6 hours - I prefer to soak my beans overnight


  


 â€¢   boil beans until tender with garlic, onion, and pig tail.


  


 â€¢   Season beans with black pepper, thyme, and salt.


  


 â€¢   Add coconut milk. Stir and taste. Let boil.


  


 â€¢   Clean rice.


  


 â€¢   Add rice to seasoned beans. Stir, then cover.


  


 â€¢   Cook until water is absorbed or rice is tender. If necessary, add more water gradually until rice is tender.


 


Note: This recipe makes a huge pot! I put most of it in the freezer. I guess you could scale it down to suit you.


 


Some kind of meat (for us it's often stewed chicken or bbq chicken without the sauce), rice and beans, fried plantain and potato salad is a very common traditional meal.

Yep, I'm pretty fond of that 'C' word food too!!! Ok now, my lips are sealed...promise!!!
