Great Chicken Chili Recipe

I was looking through my recipes to see if there were any that I could convert into SB friendly meals. I found that my favorite chicken chili recipe doesn't need any conversions! It's really good. Just enough spice. (Well for me!) It's great with a little ff sour cream
3 cans Great Northern white beans
6 cups chicken broth
1 tsp chicken stock base
1 large onion chopped
6-8 cloves garlic minced
4-5 cups cooked, chopped chicken
7 oz can chopped green chilies
3 tsp cumin
2 tsp oregano
1 tsp cayenne pepper
Combine beans, broth, and chicken stock in large pot. Cover and simmer 2 hours. Saute onions and garlic in EVOO until golden. Add all other ingredients and simmer for 30 minutes.

Mmmmm... it is good. I made a big pot yesterday and froze them in individual serving containers for Shawn (husband) to take to work for lunches. I'll be doing the same with the crock pot lasagna I'll make today and a few other things this week. Next week I won't have to cook as much at supper time because I'm also making some "family sized tv dinners" by freezing family sized portions. Saves time to double or triple recipes and saves money because I don't need to buy as much prepackaged food.
