Well Pumpkin Pie with whip cream is my FAVORITE dessert. So this is sure to satisfy my sweet tooth. Going to make it tonight. Can you tell me roughly what a serving would be for the day? I'm bad at that sort of stuff.

Pumpkin Mousse

Phase: 1

1 small can of Libby's Real Pumpkin
1 small container of sugar free Cool Whip
1 tbls. cinnamon
1 tbls. pumpkin pie spice
1 & 1/2 cups of Splenda (spices and Splenda can be adjusted to taste, I just made this recipe up so I didn't exactly measure)

Mix all ingredients in large bowl. Enjoy!Servings: About 6-8

No, they do not have the texture of "cake". They are much more dense, kind of like a brownie or torte. They have a very moist, almost custard-like consistency (kind of think like the fluffy version of cheesecake). I've loved every one that I have tried. We've done the brownies, vanilla (I top w/berries and whip cream), pumpkin and then many of my own variations. All the neighborhood kids gobble up the brownies like there is no tomorrow. But then, mentally they don't KNOW they are made from beans, so they aren't leery to begin with!

Ok, well, I'm working on being adventurous and open minded. I can do this. I'll look for a recipe for the brownies and put them in next week's meal plans. The worst that will happen is I won't like them, right? Honestly, I'm more concerned about the Splenda than the beans. I like beans. I baked peanut butter cookies that had PB, Splenda and eggs. There was such a strong Splenda taste that I could feel it when I breathed out. Now I'm scared of Splenda. I hope if there are more ingredients it will be better.

Those brownies sound great! So does the pumpkin mousse... I'm on the lookout for recipes for holiday goodies that are healthy and delicious, too. This will be my first holiday season (doesn't hurt to think ahead) "on the Beach" and even though I'm a Phase 3er, sweets have always been my downfall, especially with 4 kids in the house. So far I've been tweaking recipes to make them SBD friendly and my DH and the kids haven't really noticed a difference!
