ok, bought soba noodles - what now?

Considering I'm not a huge fan of chinese food I'm not sure why I bought them. But I'd heard people talk about them so I did.

What do YOU do with them? I'm good for stir fry. I bought both fresh (refridgerated) and some dry ones.

help!!

Both the Peanut Chicken Soba Salad and Soba-Edamame Salad w/ Flank Steak are favorites around here. And both can be eaten hot or cold, which I love!

You can make zaru soba.

And soba is Japanese, not Chinese.

Hi there, I love soba noodles. I use them under stir fries, also to replace pasta. i just like them so they are my spaghetti. do not over cook them. Doesn't take long. Good with just parmesan as a starch. sometimes I like it with parmesan and spaghetti sauce if I am in a hurry to go out. Leila
