I am going to a potluck on Thursday and I know that most foods there will not be SBD friendly. I want to take an appetizer that is yummy and SBD friendly. Any ideas are appreciated. Someone is already bringing a veggie tray. Ideas?

I usually serve pita chips and hummus and a fruit tray is always nice too.

Homemade hummus with fresh garlic & herbs served with sb-friendly crackers


Shrimp cocktail (sb-friendly cocktail sauce)


Mushrooms stuffed with crab or imitation crabmeat


Scallops wrapped with turkey bacon


Gazpacho served in little cups (like shots)

I do stuffed mushrooms or stuffed tomatoes quite often. Or like Cathy said and antipasto platter. I also just did these for an appetizer and they got rave reviews:

Mini Greek Meatballs

From the SBD Quick and Easy cookbook, pg 216

These were really good!
I did cook them a tad different, I baked them about 7min in the oven,
then I turned on the broiler and broiled them about 5-7min to get some nice
golden brown color on them. It didn't make 40 meatballs, and I did use a
tablespoon to measure the size of each one, but I only got 25 balls.

1 lb lean ground beef
1/2 small onion
1/2 cup finely crumbled reduced fat feta cheese
2 garlic cloves
1 large egg
1 tablespoon extra virgin olive oil, plus more for baking dish
1 tablespoon dried oregano
1 tablespoon plus 1 teaspoon red wine vinegar
1/4 tsp salt
1/4 tsp pepper

Heat oven to 400.
Combine beef, onion, cheese, garlic, egg, 1 T oil, oregano, vinegar, salt and pepper in large mixing bowl. Knead to combine; being careful not to overmix.
Lightly oil a 9x13-inch baking dish. Shape meat mixture into 40 (1 tablespoon) meatballs. Place in a single layer in the baking dish and bake until cooked through, 12-15 min. Serve hot.

I brought them on a tray w/pretty toothpicks for serving and a cucumber yogurt sauce for dipping.
