Wanted to share a wonderful easy recipe that I tried yesterday. "eintopf" means one-pot in German, so get the idea - throw everything into a pot and get an amazing stew. I made only 1/2 of the original recipe. All measures are approximate and it's very easy to substitute one veggie for another:
2 minced white onion
2 gloves, minced garlic
2 cubed zucchini
2 cubed green bell pepper
1 cubed eggplant
1 Can(s) white beans
3 Tablespoon(s) olive oil
500 grams ground beef
1 Can(s) diced tomatoes
1 Cup(s) beef bouillon
2 Teaspoon(s) red chili sauce
1/4 Cup(s) red wine
1. Preparation: mince and cube vegetables as directed. Drain beans.
2. Pour 3T olive oil into a pot, heat the oil, and add ground beef. Cook until beef is no longer pink. Add salt and pepper. Add all of the veggies, except tomatoes and beans. Add red wine. Saute veggies for 10 min. Add the broth, tomatoes and beans, tobasco sauce or red chili sauce, and Provance herbs (basil, oregano, rosemary, marjoram, thyme, tarragon).
3. Cook on slow for 30-50 min.
