Edamame anyone???

I bought some edamame at Whole Foods for the first time. And I don't have a clue what to do with it!!! I've heard it's good on salads, etc. But how do you all use edamame the most???
I just opened the tub and had a few bites. DD turned her nose up at it and asked me warn her if I put it in a recipe sometime soon. I'm thinking of maybe roasting some...but how and with what kind of spices???

Pete and I LOVE edamame! The first time we bought it, we accidentaly bought it in the pods and didn't really care for it. (Although a lot of people like it better that way...I think we're just lazy. lol). Now we always buy it frozen, already shelled. You can either steam it in the microwave or on the stove for about 5 minutes and just sprinkle a little salt or garlic salt on it and eat it like that, and you can use any leftovers on salad. We always put it in stir-fry. We just add it towards the end because it cooks faster than the other veggies. I've been meaning to make more bean salads, and I bet edamame would be good as the main component of a salad too.
It kind of reminds me of good big lima beans (I've always loved limas). But my dh hates limas and we had edamame in a stir-fry of sorts last week and he loved it.
I had bought the soba noodles and wasn't sure what to do with it. So...
rainbow slaw and snow peas stirfried in olive and sesame oils
edamame steamed in the microwave then added with the soba noodles, peanuts and seasoning.
we added garlic the second night we made it. Yum!
My neighbor just puts steamed and cooled edamame on top of any salad she eats. (steamed in the microwave)

I also like them in the pod just boiled with salt sprinkled on top.
I love making this salad with shelled edamame and it keeps well for working lunches or picnics. Since seasoned rice vinegear usually contains some sugar, so you may want to substitute plain rice vinegar and a little splenda.
Edamame Salad
1 16 ounce bag frozen, shelled edamame
1 can black beans
½ of a large yellow, red or orange bell pepper, chopped
1 cup cilantro leaves, cut into smaller pieces with scissors or chopped
¼ cup seasoned rice vinegar (if you want to avoid the little bit of sugar in seasoned rice vinegar, use plain rice vinegar and a little fake sugar)
1 tablespoon low sodium soy sauce
1 tablespoon toasted sesame oil
1-2 teaspoons grated fresh ginger
1. Mix the rice vinegar, soy sauce, sesame oil and ginger together at the bottom of a large bowl.
2. Defrost the edamame in the microwave according to package instructions, then rinse under cold water and shake dry.
3. Add peppers, edamame, black beans to dressing and toss to coat.
4. Refrigerate at least 30 minutes to let the beans absorb the dressing flavors. It will then last several days. Top with chopped cilantro before serving.
Serve by itself on lettuce or add a couple of ounces of cooked shrimp, turkey or chicken just before eating.
Makes about 4 servings.
Thanks for the suggestions everyone. These salad recipes really sound good!!! I think I'll try one of these as soon as I can get the ingredients. You ladies are just awesome!!!
