I hate zucchini, I will feel nauseous after forcing myself to eat it, except when it's prepared this one certain way, it's a middle-eastern recipe.

I use the small zucchini, cut off the ends and hollow out the middle with a butter knife, leaving a zucchini "tube".

I fill the zucchini with a stuffing of (raw) lean ground beef, heavily seasoned with garlic, cumin, fresh parsley, onion, S&P, sometimes add toasted pine nuts.

Bake covered at 250 in a thick tomato sauce with lots of chopped celery, peppers. This is really quite good. The sauce should be thick as the zucchini will release a lot of liquid as it cooks. (Normally there's rice added to the filling to absorb the liquid.)

I made this the other night while my family had lasagna.
