I'm planning to make this for the first time tonight and I've never made anything with sun-dried tomatoes. The recipe says to soften the sun-dried tomatoes according to package directions. Well...the package I bought doesn't have any such directions. What I bought is about 4oz. of sun-dried tomatoes in a flat plastic clear tub. I just says to refrigerate after opening. So, should I do anything to these, or are they fine just the way they are??? They look pretty moist, but I just don't have a clue....help!!!

I just usually put them in a deep bowl (much bigger than you think you will need), cover with a little water or other liquid (use wine if the recipe calls for it, for example), cover with a plate, and microwave for a couple of minutes, stirring occasionally. The tomatoes should plump up.

Thanks Deb. I bet they will be a little leathery. I think I'll do the microwave thing before chopping them.

Should I be looking somewhere else in the store for sun-dried tomatoes??? I found these in the produce, next to the jars of minced garlic.

Like I said, I'm clueless!!!

We'll see if we like them tonight. I don't recall if I've ever eaten anything with sun-dried tomatoes in it or not. DH is good about eating anything I put on the table. He knows I like to try new recipes all the time, so I'll know if it's a hit if he says 'it's a keeper'. DD is a little harder to convince about trying new foods, but she's starting to come around.

I'll let you know how it goes. DD should like this, tho. She's about the only kid I know that loves spinach!!!

Just wanted to report in on the Mediterranean meatloaf. It turned out really well. I took Teresa's idea, I think, and just mixed the spinach/onion/cheese mixture altogether in the meatloaf. Made it quite colorful. We enjoyed the sun-dried tomatoes in the dish. Thanks for everyone's help. I used Cathy's method of pouring boiling water over the tomatoes to soften them. Worked like a charm.

Now I have leftover sun-dried tomatoes and I don't have a clue what to do with those. Do they freeze well???

I've never frozen them, but I usually only hydrate as many as I need for a recipe.

These ideas sound great. Thanks ladies. I always hate to have to throw perfectly good food away. But I am so creatively challenged when it comes to making up my recipes!!!
