Crockpot Cuban Pork Dinner

We ate at a tapas restaurant over the weekend and of course I started craving cuban food when we got home. So I put something together that I believe is Ph 2 friendly and turned out so good. It is hard to believe that the meal is SB friendly! Yum Yum!!!
Crockpot Cuban Pork
Lean Pork Loin (I am not sure how big mine was)
1 cup Mojo Criollo (spanish citrus marinade)
a few cloves of garlic (I pound them on my counter to release the flavor - I love garlic so I added 3 or 4, but you can adjust to your liking)
1 whole Spanish onion, sliced
Throw all of this into crockpot and cook on low for 8-10 hours
Serve pork slightly shredded with black beans, brown rice seasoned with yellow rice seasoning, sauteed red and green peppers and onions. I added little spoonfuls of Sofrito (you can find a jar of it in the Spanish food section, Goya section, it is a paste made from tomatoes, peppers and onions) in with the beans and veggies for extra flavor. It all came out great. And fulfilled my craving for cuban food! Adding the yellow rice seasoning to brown rice really made the meal that much better!
Gosh...I really hope this is SB friendly....!!!
