Here's a CYC pop quiz. What has 100 calories, 4.5 grams of fiber, 0 fat, 11 percent of your daily vitamin C, 3 times to potassium of an apple and a figure like Jennifer Lopez? Give up? It's the mighty pear. While most of us are familiar with the Bartlett, pears actually come in a number of varieties including Anjou, Bosc, Comice, Seckle, and Forelle and range in hue from red to green to gold. This delicate fruit is usually sold firm, and will ripen if you let them sit on your counter for a few days or place it in a paper bag with an apple or banana since ethylene gas they give off speeds the ripening process. When the area near the stem yields to gentle pressure, it's just right. Handle ripe pears with care, as they bruise easily, but with lots of fiber, they're the pear-fect snack.
