Pumpkin Pie Oatmeal

I just found this receipe on another board and it sounds really good. I want to try it for breakfast sometime this week!
Pumpkin Pie Oatmeal
Ingredients:
1 cup water
1/2 cup Oats
1/4 cup pumpkin puree
cinnamon
pumpkin pie spice
walnuts (optional)
3 teaspoon brown sugar (I would sub. splenda)
Directions:
Boil water and add oats. Reduce heat and cook oatmeal until most of the water is absorbed. Mix in pureed pumpkin and sweeten to taste with brown sugar, cinnamon, and pumpkin pie spice (or nutmeg). Top with walnuts.
Serves: 1
Preparation time: 10 min.

A co-worker mentioned a similar recipe to me today, made with Splenda brown sugar and pecans. Ts got me wondering about 3 things:
1. Should we count pumpkin as a starch or veg?
2. Is Splenda Brown Sugar "legal" or does it contain too much actual sugar?
3. How would pumpkin taste mixed in with my afternoon yogurt?
So, I tried the pumpkin yogurt and while my creation may need some tweaking before it is great, it was a pretty good and filling snack. I combined 6 ounces non-fat yogurt (Fage), 3 heaping tablespoons pumpkin puree, a packet of Equal, 1/2 teaspoon vanilla extract and a few dashes on cinnamon. I think it would benefit from some pumpkin pie seasoning, but I did not have any, or some nutmeg, but I was too lazy to grate some.
1. Should we count pumpkin as a starch or veg?
Pumpkin is a starchy vegetable and is counted as a grain.
Thanks for the answers. The yogurt did turn out pretty tasty, and I will definitely keep playing around with it.
I'll probably try your pudding recipe too. Before I started this diet, I really shied away from anything artificially sweetened or flavored because I was afraid it would set off headaches (and, if I am being totally honest, because I am rather a food snob). But I have had some success with artificial sweeteners since I started this WOE, and very few headaches, so I'll keep being open-minded about things like the pudding. I always enjoy reading posts on this board when people say that they are pushing themselves to try certain veg or meat or grain, as I have no problem with any natural food but sugar free maple syrup scares me!
