I made this once and it was very tasty; different for a pot roast. We're having it again tonight.
Rio Grande Pot Roast
1½ cups thick-and-chunky salsa
1 cup water
1 can (6 oz) NSA tomato paste (I left this out, as I didn't have a NSA verison on hand)
1 packet taco seasoning
1 3-lb boneless beef bottom round roast (or whichever lean cut you prefer)
½ tsp each salt and pepper
2 Tbsp natural peanut butter
1/3 cup chopped cilantro
Directions:
1. Sear the roast in a pan. Put the roast into a crock pot.
2. Add the salsa, water, tomato paste and taco seasoning to the crock pot.
3. Cover and cook on low 8 to 10 hours, until the beef is very tender. Remove to a cutting board. Stir peanut butter and cilantro into sauce. Slice meat against the grain; serve with the sauce.

That sounds interesting.
