This is a favorite of ours. I actually adapted this from a Weight Watchers recipe to be SB friendly. We eat it as a main course but it would make a great side too.
Zesty Chickpeas and Shells
Makes 4 servings.
Ingredients:
2 3/4 cups medium ww shells (i have a problem finding medium whole wheat shells so I usually use 3 cups of small ww shells)
1 15 1/2 oz can garbanzo beans( chickpeas), rinsed and drained
2 tablespoons red-wine vinegar
4 tsp garlic oil or extra virgin olive oil
1 tablespoon water
1/2 teaspoon salt
1 red jalapeno pepper, seeded and minced (wear gloves when handling to avoid irritation)
Directions:
Cook the shells according to package directions. Drain and rinse with cool water until just warm. Meanwhile pulse 1/2 cup of chickpeas, vinegar, oil, water and salt in blender until almost smooth. Scrape into large mixing bowl; stir in the pepper. Add the shells and the remaining chickpeas and toss to coat.
NOTE: I have a hard time finding red jalapenos so I usually use green or Habeneros which are really hot.
Enjoy!
