Rick Bayless’ Tomatillo/Tahini Chicken, Fish or Veggies
(adapted from “Everyday Foodâ€)
2 Cups store bought tomatillo salsa (mild or medium, to taste)
1 ½ Tablespoons vegetable or olive oil (I used toasted sesame oil for flavor)
1 Cup chicken broth
3 Tablespoons tahini
½ Teaspoon Salt
¼ to ½ Teaspoon Splenda
1 can (15 ounces) white beans, drained
1 ¼ pounds boneless, skinless chicken breast (I cut them into tender-sized strips)
1 Tablespoon toasted sesame seeds for garnish (I forgot this and didn’t miss it)
¼ Cup (loosely packed) chopped fresh cilantro for garnish
I added: 3 tablespoons lf sour cream
In a blender or food processor, process the salsa to a smooth puree. Heat the oil in a very large skillet (12 -14 inches) over medium high. When it is quite hot, add the salsa all at once. Stir the salsa as it reduces to the consistency of tomato paste, about 5 minutes. Sitr in the broth and tahini. Return to a boil, then reduce heat to medium low and simmer 10 minutes. Taste and season with salt (about ½ teaspoon) and a bit of Splenda.
When the sauce has simmered for about 10 minutes, nestle the chicken in it, covering completely in sauce. Cover skillet and continue simmering gently until chicken is done (10-20 minutes, depending upon the size of the pieces). Transfer chicken to plate.
Mix beans into sauce until heated through. At this point, I thought my sauce was a little spicy, so I stirred in 3 tablespoons of sour cream to reduce the burn. It was a great addition.
Top chicken with sauce, sesame seeds and cilantro.
Fish Variation:
Instead of chicken, use 1 ¼ pounds skinless fish filets (such as salmon, halibut, snapper or striped bass). Poach the fish in the sauce (instead of the chicken) until flaky, 5-6 minutes for ½ inch thick filets.
Vegetarian Variations:
Replace the chicken broth with vegetable broth. Use the sauce with grilled vegetables and tofu. Or, omit the tofu, add a second can of white beans to the sauce, and serve over grilled vegetables alone.
