Onion Roasted Sweet Potatoes

Think I am going to try this recipe for turkey day.

INGREDIENTS

  • 2 (1 ounce) packages dry onion soup mix
  • 2 pounds sweet potatoes, peeled and diced
  • 1/3 cup vegetable oil

DIRECTIONS

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. In a large bowl, toss the dry onion soup mix, sweet potatoes and vegetable oil until the sweet potatoes are well coated.
  3. Arrange the mixture on a large baking sheet. Bake in the preheated oven 40 to 50 minutes, or until the sweet potatoes are tender.

Hey Mary,

I used to make this all the time with regular potatoes. Except I only used 1 package of onion soup mix. I haven't tried this with sweet potatoes. Bet it would be good. Is the onion soup mix legal???

It is yummy Mary. And so easy to make. Hope you enjoy it. I was kind of hoping that the soup mix is legal. I've got probably 2 boxes of that in my pantry, but I've been a little afraid to use it.

Maybe Cathy or Mags could let us know about the onion soup mixes???

There are a few ingredients in the onion soup mix that are questionable. I always make my own version from this copycat recipe:

Ingredients
1/4 cup dried minced onion
2 Tbsp. instant beef bouillon
1/2 tsp. onion powder
Directions
Combine all ingredients. Quantity is the equivalent of 1 package of soup mix.

Thanks Cathy. I thought it was kind of 'iffy'. When the ingredient list has stuff that's hard to pronounce, I usually just stay away from it..LOL!!! Thanks for the copycat recipe. I'm saving this for the next time I have a recipe that needs onion soup mix.

You're welcome. I use this in my meatloaf and it's very good. I bet it would be good with potatoes, too.
